Weekend BBQ Chicken

There’s just something about the weekend that calls for BBQ chicken! Longer days and lazier meals that can start at lunch and carry on into a grazing dinner are what is so appealing about a chicken BBQ. This recipe is one of my favourites as it’s so easy to prep for and requires minimal supervision until completion.

Preferably, start with a whole high-quality chicken. I often pick up an organic bird from my local farmers’ market – the taste is incomparable and worth every penny. Ensure the chicken is properly cleaned and pat dry with paper towels. Preparing your BBQ sauce can be the fun part; you can either choose to go with your favourite bottled sauce or make your own.

For this recipe, I like to mix equal parts ketchup, brown sugar, and apple cider vinegar. Add a dash of Worcestershire sauce, a pinch of chili flakes, garlic powder, onion powder, and a splash of lemon juice. Stir until all ingredients are well combined into a thick sauce. Before placing the chicken on the grill, ensure it is generously coated with the BBQ sauce on all sides. Let it marinate for at least a couple of hours, allowing the flavors to penetrate the meat thoroughly. Preheat your grill to a medium temperature, about 350 degrees Fahrenheit, and place the chicken on the rack, breast side up. Close the lid and let it cook for about an hour, basting it with more sauce every 20 minutes. Be sure to monitor the temperature of the chicken, ensuring the internal temperature reaches 165 degrees Fahrenheit for well-cooked, juicy meat.
